Brownies

step one: mise en place! Preheat oven to 350°F.

step two: in a microwave-safe bowl, melt the butter and chocolate. Work with 30 second intervals so you don’t burn the chocolate. Stir until smooth.

step three: Add the sugars and cocoa powder to the butter/chocolate mixture. Whisk together until smooth.

step four: Whisk in the eggs until smooth.

step five: Fold in the flour just until the flour is no longer visible.

step six: Pour the brownie batter into a 9×9 square pan that has been lined with parchment paper. If your don’t have parchment paper, you can spray the pan with nonstick spray. Smooth the batter with a small offset spatula then bake for 30-40 minutes until done.

step seven: Once brownies are done, allow to cool completely.

Waffle Cone Caramel (dry method)

step one: mise en place! Crush the waffle cones into bite size pieces using a rolling pin and ziplock bag. Warm the heavy cream in the microwave for 1 minute.

Step two: Sprinkle a small amount of sugar into a medium sauce pan over medium heat, just enough to coat the bottom of the pan. Continue sprinkling small amounts of sugar into the pan once it begins to melt. It will start to caramelize rather quickly because it is being added in smaller amounts. But this is what we want. If you were to add all the sugar at once, it would take FOREVER for the sugar to melt then caramelize. Once all the sugar has been added, continue stirring with a high heat spatula or wooden spoon until the sugar has reached a dark honey color.

step three: Add the warmed heavy cream, SLOWLY, while whisking with a metal whisk. Be careful of the steam, it will burn. Then add the butter and vanilla while continuing to whisk.

step four: Cook the caramel, whisking constantly until it reaches 240°F. This process takes time, approximately 5-7 minutes.

step five: Remove from the heat and carefully stir in the waffle cone pieces. Pour the caramel on top of the brownies and smooth out. Wait until the caramel has cooled and set before cutting.

Brownies

  • 4 oz dark chocolate finely chopped
  • 6 oz butter salted, cubed
  • 60 g cocoa powder
  • 293 g sugar
  • 107 g brown sugar
  • 3 each eggs large
  • 2 tsp vanilla
  • 104 g flour all-purpose
  • 1/2 tsp salt

Waffle Cone Caramel

  • 300 g sugar
  • 1 cup heavy cream warmed
  • 4 oz butter salted
  • 1 tsp vanilla
  • 5 cups waffle cone pieces

Instructions
 

Brownies

  • Preheat the oven to 350℉. Line a 9×9-inch square baking pan with parchment paper.
  • Combine the chocolate and butter in a large microwavable bowl. Melt in 30-second increments to prevent burning. Stir the mixture between each session.
  • Whisk in the cocoa powder and sugars until combined. Add the eggs and vanilla. Whisk or beat until well combined.
  • Stir in the flour and salt until no streaks of flour remain. Pour the brownie batter into the prepared pan and smooth out the top. Bake for 30-35 minutes. Set aside to cool.

Wafflecone Caramel

  • Add a small amount of the sugar to a medium saucepan over medium heat. Once the sugar starts to melt, add some more sugar. Continue this process until all the sugar has been added. You can stir the sugar. Wait until the sugar turns golden brown.
  • Heat the cream in the microwave while waiting for the caramel. Add the warm heavy cream, butter, and vanilla to the sugar. Whisk constantly and avoid the steam! It is very hot. Once the butter has melted, attach a candy thermometer or digital thermometer to the pan. Cook the sugar to 240℉.
  • Remove the caramel from the heat and fold in the waffle cone pieces. Gently spread the caramel over the cooled brownies. Allow the caramel to cool completely before cutting.
